Crispy Sea Bass Tacos with Cilantro Crema

This versatile dish works beautifully as an appetizer or a light summer meal — fresh, vibrant, and full of crunchy texture. Layering seasoning throughout each step is key to building depth of flavor. The cilantro crema is equally versatile. Try it on salads, sandwiches, or as a dip for chicken fingers.

Ingredients
For the fish:
1 lb. fresh sea bass, skin removed
1 tsp. garlic powder
1 tsp. paprika
Salt and pepper, to taste
Neutral oil, for searing
Corn shell tacos, for serving
For the slaw:
1 mango, peeled and julienned
1-2 jalapeños, seeded and thinly sliced
½ red onion, thinly sliced
¼ cup fresh cilantro, chopped
Juice of 1 lime
2 Tbsp. light olive oil
Salt and pepper, to taste
For the cilantro crema:
1 cup mayonnaise
1 bunch fresh cilantro
1 jalapeño, seeded
Juice of 1 lime
Kosher salt, to taste
Directions
Prepare the fish:
Slice the sea bass into small strips and pat dry thoroughly with paper towels.
Heat pan over medium heat with 2 tablespoons of neutral oil.
In a bowl, combine the garlic powder, paprika, salt, and pepper. Season the fish evenly on all sides.
Once the pan is hot, sear the fish for 1-2 minutes per side, until it flakes easily. For a proper sear, avoid moving the fish during cooking. Remove from the pan and set aside to rest.
Prepare the slaw:
In a bowl, combine the mango, red onion, jalapeño, and cilantro. Drizzle with olive oil and fresh lime juice, then season with salt and pepper. Toss to combine.
Prepare the cilantro crema:
Add all ingredients to a food processor and blend until smooth. Adjust seasoning with salt to taste.
Assemble the tacos:
Fill each taco shell with a portion of fish, top with mango slaw, and finish with a generous drizzle of cilantro crema.
